Quickie Vegan Meals

 

Want to achieve higher consciousness? Eat vegan.

Here are my top three recipes I have on heavy rotation. Your body will thank you. XO

 

Vegan Pizza

Ingredients:

- sprouted whole wheat wraps (or tortillas)

- tomato sauce

- vegan cheese

- onions

- mushrooms

- arugula

- avocado

Preheat oven at 350 degrees. Place wraps on baking tray. Spread sauce on wrap then top with vegan cheese, onions and mushrooms (in that order). Bake for 15-18 mins (I usually lean more towards 18 because I love the crunch.) Top with fresh arugula and slices of avocado. Nom nom!

 

Cous Cous

Ingredients:

- Trader Joe's Israeli Cous Cous

- 4 garlic cloves, minced

- grape tomatoes

- spinach

- avocado

- olive oil

- salt

- pepper

Cook cous cous according to box directions. Transfer to mixing bowl once cooked. Drizzle olive oil and add garlic and give it a toss. Add tomatoes and avocado pieces. Tear spinach leaves and toss altogether. Add salt and pepper to taste. Bam!

 

Vegan Tacos

Ingredients:

- organic tortillas

- refried black beans

- riced cauliflower

- taco seasoning mix or Soyrizo

- red onion, diced

- arugula

- cilantro

- guacamole

- lime

 

Heat black beans and set aside. Sauté cauliflower with your choice of taco seasoning or Soyrizo. Set aside. Heat the tortilla if you'd like, then spread beans. Add cauliflower. Top with arugula, onions, ciltantro and guacamole. Finish with a generous squeeze of lime. Órale!
